a. Investigate and report on the management’s daily functions

Daily functions include line-up at 11A, 3:45P, and 5P.​

When servers and kitchen personnel arrive in the morning, they start their opening duties which means stocking the front servers station, we open the establishment up to guests and the kitchen closes at 10P, the bar not until 11P on Sun-Thurs, Fri & Sat we have the bar open until 1:30A/2A depending on live entertainment.

After they start to close down, the closing manager goes through and does a check for the back line, the dish tank, and a server check.  Throughout the night when servers have completed their tasks including sidework and roll-ups then the available manager will do their cash outs so they can head home.

3. Describe the means by which the property provides the following services, and how does it manage these services:

a. Maintenance

We have bussers and other support staff between the dining areas and the kitchen that keep the restaurant clean.  They all have a role for sidwork that can be done in their down time, we check it when we close as management.

b. Housekeeping

c. Accounting

Joe or Bob come in and do the books every morning for the previous day with sales, disperse tip outs and count drawers.

d. Security

Basic security when locking up and closing or opening, only a few of us have keys so not everyone can get into places such as the alcohol, offices and building.

4. Equipment, is it leased or purchased?

We have AV equipment for larger parties and entertainment nights.  Most of the time the bands/DJ brings the equipment with them.

5. Does the firm have a “green” energy management program? Describe the system used.

No​

6. Computerization: Describe the extent to which the property utilizes computers.

a. What functions are automated?

Scheduling, payroll, POS, ability to make reservations online.

b. What types of management information do the systems provide?

We have iPads as part of our POS, servers are able to have an iPad to take down orders, take payments, and even check to see which ingredients are in what.  This comes in handy when someone is asking about specific spices or an allergy.  Hosts have an iPad at the stand to assign servers to sections and seat guests as well.

c. What have been the benefits and drawbacks of computerization?

Benefits: It is easier to keep everyone updated, its quick and can be easy to use if trained correctly.

Drawbacks: Bad wifi connection can take us down (as has taken us down) especially in peak periods.  This means taking their orders down on paper and writing two tickets; one for the server and one for the kitchen.

d. Show examples of computerized information and explain how this is used by managers to improve performance.

This is the POS system, as a manager we have our ID and a password that we can use if servers need us to reopen a check, promo something like a dessert or void something​ like cold food that was sent back.
